Mmmm Banana Cake
One of my favourite things in the world are banana cake or banana bread. Everyone, if there is banana bread to be had, please inform me. ;)
This week, I tried 2 recipes. One banana bread and one banana CAKE recipe. Both were pretty good but the bread needs some workin on. So here’s the cake recipe for you guys!
 Le Very Awesome Banana Cake
3 each bananas very ripe
1 1/2 teaspoons vanilla extract
2 cups flour
1 cup walnuts chopped
3/4 cup sugar
1 teaspoon salt
125g butter
3 teaspoon baking powder
2 eggs
Preheat oven to 350 F. Butter bread pan and coat with flour.
Mix flour, salt & baking soda. Cream butter & sugar. Mix in egg & vanilla. Mix in bananas and nuts. Add flour mixture.
Mix all ingredients together thoroughly. Pour in bread pan. Bake at 350 F for approx. 1 hour or until a toothpick can be extracted cleanly from the bread.

I have soooo many banana bread and cake recipes to try… but you posted this one on my birthday so now I definitely have to try it!

FamilyFirst – Awww thanks! TRY IT! You won’t regret it. I have a never ending list of banana cake recipes too! OK so I lied…I only just started having a list ever since I found tastespotting a few weeks back!

your banana cake looks delicious. i have a question though. my banana bread/cake i bake always have black specs in it. how did your turn out without them and yellow? lemon juice?

cindy Thank you! It was probably the banana I used – not so speckled. Try em out and you’ll see! I however was disappointed at the lack of spots LOL. The yellow was natural – banana and butter. No lemon juice, although it may be interesting!

I’ve been trying to find an AWESOME banana cake recipe and found your blog via Tastespotting. I’ve tried two recipes thus far but in both cases the cake turned out way too dense…essentially like banana bread. :( (which tastes great, but not the texture I am aiming for). Any tips on getting your cake light and fluffy? (FYI, the recipes I’ve tried thus far include all the same ingredients you’ve listed here, but maybe slightly different measurements).

Terri This is an awesome banana cake! It’s tender and fluffy, I wouldn’t say light & fluffy but tender & fluffy!
If you want an awesome banana bread, head over to http://mybakingaddiction.blogspot.com/2008/11/one-very-moist-banana-cake.html as this produced a nice banana-bread-cake texture. It’s called a Banana Cake, but it wasn’t fluffy – the texture was exactly as per Jamie’s picture! :) I loved it, and loved my recipe here too.
As for light & fluffy, always separate your yolks & whip the egg whites til they’re a stiff foam. Fold it in after all the ingredients are in.
I’ve only made a cupcake recipe of this, but it works really well: http://auntyyochana.blogspot.com/2006/07/banana-cake.html – I reduce sugar to 120g & butter to 150g and sometimes add chocolate chips =)

Let me know how it turns out! You should start a banana cake blog! Chronicling the search for the best one. I would so do that, if I had time! I’d so do that to search for the perfect recipes for banana cake, banana bread, carrot cake, chocolate AND vanilla/butter cake! Still searching for the elusive best recipes, tho I’ve kinda found the ones for choc & banana ;-)

This receipt is fucked up! My girlfriend followed your receipt to make the cake and it turns out a rubber instead of light and flully. I ate it and thought it was great but my girlfriend said it wasn’t even a cake. Help me to make it light and flully the way your picture shows, cause my girlfriend is so sweet and loving.

thanks so much for this awesome recipe. i hv tried it out and it tasted yummy… but my presentation of the cake is not as nice as yours … hmmm need to buck up my photography skills. anyway, i love reading your blog, you are so young yet so talented in baking … thumbs up!
