Muesli Bars

So I wandered into the grocery store the other day looking for some granola bars among the terrifying aisles..where I always get lost. They keep switching it around too! (I bet it’s a marketing ploy for you to discover all their new sections) Finally I got to my favourite place, The Cereal Corner and my jaw nearly dropped down to the ground.

Everything had gone up by almost RM2 to RM5 including my beloved granola bars! Just when I had an excuse to buy em. SIGH! Had to kiss my muesli bars goodbye and troop home without them. Surely I can survive picking the wild mountain leaves for munching right?

NO! I forgot, I can bake can’t I?? Well being a little rusty after being choked by cupcake recipes for too long – I googled “make your own muesli bars” not hoping for much..I mean who in the world makes their own muesli bars right????

I found a couple hundred weirdos like me! Haha! Take that!

It was my day off work today and I had all the ingredients to save me 3 meals (the bar box was RM12) and set to “real” work =D Or bluff work. Whatever works, the office seems more like surreal work. I make the company’s success my goal, but then again..I only really thrive on my real work, which is whatever I love doing! Hehe. Do what you love, love what you do…

Googling brought me to allrecipes.com – ah the good old days where it was my best friend & I baked only what was on their top 10 lists! I still go by stars, so I picked a 4 1/2 stars rated Muesli Bars recipe. I read it…..and it screaaaamed sugar fat oil ahhhhh! Check this out:

* 1/2 cup unsalted butter
* 1/3 cup packed brown sugar
* 3 tablespoons honey
* 1 cup quick cooking oats

In a brave moment of resolve, I decided forge on. Cut down and use healthy replacements with more oats..yes, more oats! Arrr how the Quaker Oats Man smirks.

Muesli Bars

* 1/3 cup unsalted butter
* 1/4 cup brown sugar
* 3 tablespoons honey
* 1/2 tsp vanilla
* 1 2/3 cup rolled oats / normal oats
* 1/3 cup chopped hazelnuts/almonds
* 1/3 cup chocolate chips
* 1/3 cup shredded coconut

1. Preheat oven to 350 degrees F (175 degrees C). Grease an 11×7 inch baking pan.
2. In medium sauce pan, over low heat, combine butter, brown sugar and honey. Cook, stirring, until butter or margarine is melted and sugar is dissolved. Remove from heat. Add oats, nuts, coconut and chocolate chips. Mix with a wooden spoon until well combined. Press mixture evenly into the prepared baking pan.


3. Bake for 15 to 18 minutes in the preheated oven, until the top is golden brown. Let cool in the pan and cut into bars.
