Thanks to the friendly swaying hip coconut trees, we creatures of the earth are blessed with this rare gift from above: Bounty. I discovered them again last week, after someone spent RM25 on a party packet of them…and no, I’m not all over it..but I did want to save some people some cash! So eunice the economistical baker made these:

30 g mashed potato
150 g icing sugar
60 g unsweetened dried coconut shreds
1/4 tsp mint essence
1/2 tsp vanilla essence
150 g milk chocolate
1tbsp vegetable oil (i used olive, it worked!)

1. combine first 5 ingredients together until sticky and mold into bounty sized bites.
2. melt chocolate in microwave for 30 to 40 seconds & stir in oil
3. dip compacted coconut into melted chocolate
4. place 1″ apart on a non-stick baking papered tin
5. refridgerate
6. knock yourself out
