oh so quickly, the Coconut Slices.

The only question is, what DOES the humble coconut slice!? That, my friends, is something we may just never know. Why?
Because the subject in question no longer is. Or rather, it exists deep in the abysses of human satisfaction (also known as their stomachs) that belong to the hungry souls in my house. Yes, everyone loved it!

Coconut is a staple food on Malaysian lips. Kuih kuih, nasi lemak, onde onde and so much more in Nyonya cooking. With my groovy Nyonya heritage, the coconut is no stranger to me. But I have never, ever incorporated it into anything other than Melting Moments (my first cookies!) in my baking life!
All this changed when le bro insisted on buying a pack of mini Bounty chocolates for an ungodly price of RM25. I took a bite and said…’I can make that!” – last thing I should have done! The bro is known for keeping people to their word, and to my word was I kept! This post was my first foray into the coconut world! After that, it was all leftovers.

Yup, the truth is…these coconut slices AND the Bounty Cupcake were all results of my leftover coconut and chocolate from making the Bounty’s themselves. Quite obviously, it’s hard to masque the distinct flakes of the coconut and shameless flaunting of the melted chocolate. However, now I present to you a quicker and fun way to have a bite in the summer! (which is all year round for me…at this time o’ year though, it’s up to you Aussies and people in the Southern Hemisphere to take the torch for those in the North while we Ultimately Cool Equater People take each summer day with another sigh).
Coconut Slices
Ingredients
30 g mashed potato
100 g icing sugar
60 g unsweetened dried coconut shreds
1/4 tsp mint essence
1/2 tsp vanilla essence
150 g milk chocolate
1tbsp vegetable oil (i used olive, it worked!)

Instructions
1. combine the first 5 ingredients together in a bolw
2. press and compact it into a 13″9 tray
3. melt the chocolate and stir the oil in.
4. pour it all over the top of the tray and refridgerate.
So simple? Yes! Try it out if you dare! Remember…the coconut waits out there for you, still slicing.

Oh yum yum yum. It is 1.55 in the morning here and although I am really sleepy and wasn’t in the least hungry until 2 minutes ago, that looks so good I could go and make it now! Wonderful photography by the way!

Deborah First off: you make so many dangerous treats over at your house I’d love to live dangerously there!! ;-) Coconut, I’ve learnt to love it just recently! I realise your coconut (on your blog) and mine are different. Is it dessicated? I can’t seem to find shredded coconut over here! Does it come in a fresh pack?

Wait — mashed potatoes? Seriously? Are we talking the boxed flaked kind or actual spuds mashed up? I’m dying to know, as these bars look DIVINE!

Emily Yeah I used the taters themself! We had left over mashed potato, so I really just used that. I think it should be okay to use the boxed kind, but it must have the water added in – not just the dry mix! Thank you! I feel a rumbly in my tumbly just looking at them too!
