This cookie was never meant to be. I had one egg white left from baking the Mango Kugelhopf and well, I’d always wanted to make meringue kisses…

but did MURPHY want me to make meringue kisses???


You obviously knew the answer, didntcha!

Nooo he didn’t! *shakes fist*

I didn’t read the recipe very well. Not much…okay, at all..but I didn’t get that you had to gently fold in the flour so you don’t mess up the egg white mixture. SO, into the fluffy egg whites I whipped the flour & beat it to liquidy perfection. A few seconds later the neurons from my eyes went up to my brain and I realised, “this ain’t right!” Oh no! What do I do now!? I’m a failure! Of course I’m not! At least, I won’t be. Uhhh! *shifty eyes*

My gramma was watching like a hawk, my heart quivered. Or is that what your lips are supposed to do? Me, the innocent victim (Murphy’s really the villain of the piece I promise) stared at the bowl of liquid goo that was NOT smiling up at me.

Finally…finally!

…….nothing much happened. NO. It didn’t magically poof up or anything so my anxious brain thought of another way to save these babies. Add more flour and plop em into circles!

And that’s exactly what I did.


“Hey look, fake macarons!”

Nervously, I put them in the oven praying to my sweet Lord something good would come out of it. Because I sure as anything had no idea what they were going to be!

10 minutes later, it was time for the cookies to meet their maker. Mmmmm. Whadabout a little bit of buttercream in the center? Yeah like faux macarons!

And this is what I learnt: when in doubt, have a tea party.

Lesson today: If you’ve overwhipped your egg whites, never fear, just yank off all fluffy meringue ideas from your head, add a little flour until spreadable and plop em on that baking sheet! It’s just like a boxa chocolates…you never know whatcha gonna get.

    Eunice! Your pictures are amazing!! I totally agree with you on eating rice savoury. I’ve never had rice in a dessert-like way.. especially with milk! I’m not even going to attempt it with chocolate (not wasting chocolate.. hahah) Hopefully the brown rice, even though it keeps its shape will actually absorb the milk though.

    Steph – Thank you Steph! Thank God I have a friend in this rice thang. Hehe! My mom, who was in the UK for a while, says it tastes pretty good! So I’m looking forward to a healthy rice pudding soon :D Use lighter brown rice, don’t go for the red rice! Those things have issues. With absorbing! Can’t wait to see yours! Please do it with me, purdy please?
